Turkish Lentil Soup

Tonight I was feeling for something light and delish, so I opted to make some Turkish soup! Real quick and easy, try it and tell me what you think. :)

All you need:
1 tablespoon of olive oil
1 cup of lentil
1/2 onion diced
2 cloves of garlic minced
1 lemon (juiced)
1 tsp cumin
handful of cherry tomatoes, cut in half
4 cups of chicken stock
*optional hot pepper flakes



Directions:
In a pot on medium high add a tablespoon of olive oil, garlic and onions. Cook until the garlic is soften and onions are translucent. Add in the cumin and tomatoes, allow to cook for about 8-10 minutes. Throw in the lentils, stir well and pour in the chicken stock. Allow to simmer for 45 minutes giving it some TLC every now and then. Squeeze lemon and sprinkle a few pepper flakes and voila! Le diner est servi!!! Jouir!!! 





Garnish with a few slices of lemon and truly enjoy!
